As you make this recipe think about anyone you may know who has a different sexual orientation or someone of a different race. Have they ever been a victim of a hate crime and never got justice? Or are you someone who participates in these hate crimes towards others? In Germany police are not taking proper action to protect their civilians from hate crimes. Many times they go ignored, or the charges end up being dropped by the police. These charges end up never being followed through with, which affects the individual who was the victim or their families, in cases resulting in murder.

While preparing and making these dumplings you are doing an action that makes you just like everyone else. At the end of the recipe it states to sprinkle the bread crumbs unto the dumplings. This symbolizes that even if all the dumplings are not the same size, shape, or color the end result will have them all the same with the bread crumbs. The purpose of expressing this is to explain that just because we may all be different on the inside does not make us less equal to anyone else in the final outcome of it all.

Ingredients:

CROUTONS:
1/4 cup butter
3 slices dry bread, cut into small cubes

DUMPLINGS:
4 medium potatoes, peeled and quartered
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground nutmeg
2 eggs, lightly beaten
2 teaspoons butter
2 tablespoons dry bread crumbs

Directions:

For croutons, melt butter in small skillet; brown bread cubes. Set aside.

In a saucepan, boil potatoes in water to cover until tender. Cool. Rice potatoes and place in a large bowl. Add the flour, baking powder, salt and nutmeg. Stir in eggs; beat until mixture holds it shape.

With lightly floured hands, shape about 2 tablespoons dough into a ball, placing a few croutons in center of each ball. Repeat with remaining dough and croutons. Refrigerate for 1 hour.

Drop dumplings into boiling salted water (2 teaspoons salt to 1 quart water). Simmer, uncovered, for 10 minutes. Drain. Melt butter in a small skillet; cook and stir the bread crumbs until lightly browned. Sprinkle over dumplings.

Yield: 15 dumplings.
